I have used Wilson Combat and Ed Brown grip safeties in addition to whatever has come on Springfield Armory, Kimber, etc. I just haven't had an issue with wanting a higher grip safety. To me they all shoot the same, no matter the caliber. Because I'm bored with home isolation during this coronavirus period, I just finished putting Smith and Alexander Palmswell beavertail grip safeties on mid 1990's vintage Para Ordnance P12 and P13 that were sitting around in my gun safe. I like the look and feel of the S&A grip safeties, but I don't know that they will shoot any better. I have S&A grip safeties on a couple of other 1911's and I'm very happy with them.

My choices are Wilson's High Ride Beavertail GS (drop in or gunsmith install) and Ed Brown.
The highest ones are Brown, STI, Chip McCormick.
Note however that there's a law of diminishing returns with high-ride grip safeties: after blending to the frame, you may find that these safeties feel a bit squarer (for lack of a better term) than others, and/or that after blending the thumb safety (which may also have to be blended) will reveal the whole underneath, when moved upwards. To some this is a problem, to others just a "meh".
Too many people miss the silver lining because they're expecting gold.

Two considerations are you'll need to modify the frame to get that real high grip, and two it often causes issues with deactivating the grip safety
