My Kimber Stainless Carry hammer has a center extension of the half cock notch. Is this to prevent damage to the sensitive sides of the sear on hammer drop to half cock?

I think you describe the half cock first seen in the Colt Gold Cup (and custom guns) and it is meant to protect the outer sections of the sear that engage the hammer hooks.

What you describe is usually referred to as a 'narrowed half-cock notch'. As you've mentioned, the idea is that this way the sear only contacts the hammer in the center of its tip, i.e. the part of the sear that doesn't touch the hammer's full-cock notch.
This feature was first seen in custom and other up-market 1911s, but it gradually filtered down the line. My 2009 Para came from the factory with a MIM hammer with such a half-cock notch.
Too many people miss the silver lining because they're expecting gold.
