Building two new shooters. How do you guys suggest dressing the rear of the slide/frame fit after fitting the barrell?

Do you mean the slide and frame are not aligned on the rear or you want some decorations on the back?
If they are not aligned, Just file down the part that protrudes.
If you want decorations, you can put horizontal serrations on them or golfball patterns.

I filed the frame on my project, and used a #120 sand paper that was rolled and cut to appropriate size a finishishing touch.

I was thinking that I should bring the slide forward just a little more so the frame will be exposed just enough to file lightly on. That area already needs to be dressed from blending the beaver tail so a little more wont hurt. Maybe tape the rear of the slide and bring the frame down to it. On another side of the project, I found when fitting the barrels using a firing pin hole alignment rod, one of the barrels is off to one side almost .010 (this is a guess) should I worry about it?

I think .010 is ok,
Blending the frame and slide is easier than you think, No need to put tape on the slide ( just a waste of time, IMO), You just move the slide forward and backward after filing untill they line up. Or you can file the slide together with the frame with the barrel installed, So that they line up perfectly.

Son of A Gun-- I'll offer the same advise someone here offered me. Get the weapon all together first and do some test firing before taking a file to the frame.

After doing the test firings recommended by Doctruptwn, I'd advise against moving the entire slide forward on the frame (by cutting more on the lower lugs) unless:
• The thumb safety won't engage,
• The feet of the bottom lugs are too wide (from front to back) compared to the specification,
• The disconnector notch on the slide's center rail doesn't go forward enough to allow the disconnector to reset/connect or
• The hammer face makes first contact with the firing stop down at its lower corner (at or before contact with the firing pin).
