Sorry all, I'm not sure if this is in the right place...

But what else does the Caspian Stainless .45 XR Kit need?

http://www.caspianarms.com/specials.php

1) grips
2) sights
3) barrel
4) hammer
and what else?

Thanks in advance for any help!

Also, any rough estimates on a what a competent gunsmith would charge to fit the parts and put them together?

5) trigger
6) Pin/completion kit
7) Spring set (note that many completion kits include the mainspring and plunger spring).
8) magazine(s)
9) magazine release assembly
10) series 80 parts, if you want a series 80.
11) barrel bushing and link (if not included with the barrel you choose).
12) disconnector
13) sear
14) thumb safety
15) slide stop
16) mainspring housing
17) grip screws and bushings

I'm sure that someone will spot something that I missed. Look at an exploded 1911 diagram, and start checking off parts to be sure. I have no idea what a smith would charge to put it together. It would depend on how much fitting this kit, and the parts that you choose require. In the end you would probably be better off just buying a new Sig (I believe these kits were made for the production of their 1911s) if you want a complete pistol made with this kit.
