Ok so if I decide to use +P ammo in a standard 5" 1911 what radius should be on the Firing Pin Stop? And still use the 16# spring or go up to an 18# or what?

I would use the standard radius mentioned for the EGW stop for any load.

My Dept. use Ranger +P and I've chronoed it at 1018 feet per second and about 523 Ft. Lbs (avg. at the muzzle from a 5" barrel).

What would be recommended mainspring weight and recoil spring weight for a load as hot as the Ranger +P we have (numbers are a 50 round avg.) while using the EGW FPS with the .070 radius

The 16 pound recoil spring is pretty universal, and will work well with anything from 200 grains at 750 fps to 230s up to 900 or so. When used in conjunction with the standard 23 pound mainspring and a FP stop radius of about 1/16th to 5/64ths inch radius, that range extends another 100 fps with the 230-grain bullet. If you intend to shoot a lot of +p stuff that hovers in the 1,000 fps range, you may want to use an 18-pound recoil spring during your practice sessions...but for limited use the 16-pound spring is fine.

Remember that the spring works both ways. Heavier springs mean slower rearward and faster forward. You're just changing the area of the gun that gets whacked around.
