It takes an air compressor (fairly large), a blasting attachment (preferably a tank), the blasting media, and experience wouldn't hurt here. Best bet, to me, is to take it to someone who does it well for a living.
Beyond that, you /can/ do it yourself. Suggestion: practise 1st on something similar but disposable.

A brushed finish can be done by hand. You have to sand the scratch out and find the right grit to match the brushed finish. I use the purple Scotch Brite pad for a brushed finish on polished stainless.
The matte finish requires the blasting.
