What types of grips were issued in WWII?
I have seen some bakelite looking ones that look black and some that look brown.
What's the skinny on these?

U.S. military 1911-A1's all came with semi-gloss brown or reddish brown plastic stocks. As far as I know, black plastic is not correct for U.S. military 1911-A1's.

Apparently during the Vietnam War some checkered black plastic grips were ordered by the Navy for use on M1911A1 pistols. I do not know why or in what quantities, however.
